I finished the last of the rhubarb off today by making Rhubarb Chutney. Of course I still ended up needing to make a double batch to use up the remaining fruit – it turns out the dominant ingredient in rhubarb chutney is not, as you might suspect based on the name, rhubarb, but is instead apples. Regardless of this slightly inaccuarte naming convention, the chutney is awesome. Beyond the apples and rhubarb it’s loaded with cranberries and spices and it’s excellent.
I’ve managed to finish this off just in time. In a couple of hours I need to leave for the Kluane Chilkat International Bike Relay, and between now and then I need to clean the kitchen (every surface is sticky at the moment from the canning marathon), pack, and prepare the food for the trip.
