Today I sat down to learn how to create icing roses as they’re pretty key elements for most wedding cakes. I was pleasantly surprised (and relieved) to discover that it wasn’t as hard as I thought. The secret is to pop them in the freezer for half an hour after you’ve pulled them off the icing nail so that you can safely handle them. That, and to create them on little squares of waxed paper that you tack to the nail with a dot of buttercream so that you can make multiple roses on the same nail. I think the results could put you into a sugar-induced coma, but it looks pretty and tastes delicious – which is really all that matters, right?
