A group of friends (and kids and dogs) have decided to make our own birch syrup this year. The temperatures around Whitehorse have finally warmed enough for us to head out and tap the trees (it has to go above an average daily temperature of 5 degrees Celsius before the sap begins to flow). We tapped ten trees and now will need to spend the next month checking on the buckets we have sap collecting in (you need to boil down the sap to a 100:1 ratio to create the syrup so we’ll be carrying a lot of full buckets out of the woods to finish this project). The next step is to set up an outside wood stove for the boiling. Keep your eyes on this blog for updates on our progress.
